Egg Sandwich on the BBQ!

Who said that you couldn't do breakfast on the BBQ. Well today I decided to make my son's favorite breakfast on the BBQ which are egg sandwiches! These are quick to make and are very delicious. You can make these on any BBQ as long as you have a griddle or you can cook them in a plane old frying pan. I decided to use my Kettle-Q Griddle which gives me more cooking surface then a frying pan. These are fun to make when camping or at home!

1. The first step in making these is to cook your bacon. I seasoned mine with a little Dizzy Pig Raging River Rub;

2. After the Bacon is ready its time to cook the slices of Ham and to start toasting the English Mcmuffin buns (cut each into two slice);

3. Once the buns are almost ready start cooking your eggs over hard (ensure the egg yolk is not runny);

4. Now that your eggs and English Mcmuffin buns are ready it's time to assemble the sandwich;

5. Put some mayonnaise on one half of buns and Cheese wiz on the other half;

6. Now place egg on one half;

7. Now place the slice of ham on top of egg;

8. Now place bacon on top of the ham and finish it off with the other slice of bun.

Enjoy and Bon Appétit!!

Gutbusters Moinks! AKA Hot Dogs stuff with cheese and wrapped with Bacon!

Everyone is always wondering what to cook as treat on game day on the old BBQ. Well today I decided to try making something that's pretty easy that the kids would love also. I decided to cook some hot dogs stuff with cheese and wrap with bacon.

My friend Andy Scalzo from the Winter Grillin group that I belong to calls them Gutbusters Moinks! Let me tell you that these treats are the bomb!

The group Winter Grillin is a group that lots of friends get together and share their passion of grilling in the winter. Here's the true meaning of Winter Grillin written by "Greg DeLonais" and "Chris Marut" which are also members from the group:

With the Winter Snow
It's time to Grill
Nothing but Great Food
This will be a Thrill
Especially with Grill Marks
Right on the Rib Eyes
Goes Great with Ice Cold Bud
Really Hot Coals
Is what Causes the Sizzle
Looks Great when their Done
Like I Like them Again
It's Juicy and Medium Rare
Now We're Winter Grilling

The Winter Grillin group can be found on Facebook. Well let's get cooking shall we!!

Ingredients

·       1 Pack hot dogs
·       1 Pack bacon
·       Bone Suckin' Sauce Seasoning and Rub or your favorite Rub

Direction

1.    Cut slit in your hot dogs length way about 3/4 of the way through, being very careful not to cut all the way through the hot dog;

2.    Very gently open the slit you made in the previous step and add a slice of your favorite cheese; (you can also add a little mustard, BBQ Sauce, etc..)

3.    Wrapped each hot dog with a slice of bacon and secure each end of the hot dog with a toothpick;

4.    Seasoned the top of the bacon with some Bone Suckin' Sauce Seasoning and Rub or your favorite Rub;

5.    Now pre-heat your BBQ to 225-250 °F for indirect cooking or you can go semi indirect using Grillgrates which is my preferred way;

Semi Indirect using Grillgrates

Indirect using pizza stone has heat deflector.

6.    You can add a little bit of apple wood to the hot coals for a little added smoke flavor and you want to cook and smoke them at 225-250 °F for approximately 1-1.5 hours or till the internal temp reaches 150-160 °F; (Optional you can sauced them the last few minutes of the cook)

I sauced them with Bone Suckin' Sauce the last few minutes.

7.    When ready you can serve them in a hot dog bun with your favorite condiments but they are just has good without the buns!

Happy  Grilling and Bonne Appétit!!

Home Made Pretzel Buns baked on the BBQ

Today I was inspired by John M. Setzler, Jr over at Man Cave Meals in trying to make some Pretzel Buns on the BBQ after seeing the ones he made on his Facebook page and his blog. I just had to give them a try! Making these Pretzel buns is pretty easy and quick to make. I never seen some of these buns in our grocery stores. Let me tell you they make the perfect buns for burgers, sliders and pull pork sandwiches!!

If you guys don't know John go and check him out here: Man cave Meals
He also has his own Kamado cooker forum which is very educational and highly recommended for anyone that owns one of these cooker. His forum can be found here: Kamado Guru

John is very known in the BBQ community for his Backyard cooking skills and I have learn lots from his blog, forum and videos!

Well let's get cooking!

Ingredient for the Pretzel Dough

·       1 1/2 Cup Luke Warm Water
·       4 TBSP Melted Butter
·       1 TBSP White sugar
·       2 TSP Kosher Salt
·       2 1/4 TSP Active Yeast
·       4 1/2 Cup Flour

Ingredient for the Pretzel Dough Soak

·       10 Cup boiling water
·       2/3 Cup Baking Soda

Ingredients for the Egg Wash

·       1 Egg beaten
·       1 TBSP water

Direction

1.  In your mixer mixing bowl add the water, Melted Butter, Sugar, Salt, yeast and flour;

2.  Now mix at low speed with dough hook till the dough ball is form, then increase speed to medium for a couple of minutes;

3.  Remove Dough ball from mixing bowl and wipe the bowl down;

4.  Coat the bowl with Pam or vegetable oil;

5.  Place Dough ball in the bowl and turn the Dough Ball to ensure its lightly covered in oil;

6.  Cover the bowl and let the dough rise for approximately 1 hour till its twice its size;

7.  After the dough as risen take it out of the bowl and work it into a perfect ball then place on a lightly floored surface;

8.  Now cut the dough ball in six even pieces and shape each pieces into bun shapes then set aside and move to the next step.

Now it's time to make the Pretzel Dough Soak mixture which is pretty quick to make.

1.   In a pot bring 10 cup of water to a boil then remove from heat;

2.   It's now time to add the baking soda to the water;

3.   Place each dough ball in the water for 30 seconds a side then set aside;

4.   Place the dough ball aside on a piece of parchment paper and move on to the next step.

At this stage of the game you want to preheat your BBQ and Pizza stone to a Temperature of 450 degrees Fahrenheit.

It's now time to make our Egg Wash.

1.   Beat one egg and 1 TBSP of water in a small bowl;

2.   With a pastry brush the top of each Dough Ball with the egg wash;

3.   Sprinkle some Sea Salt or Kosher Salt on the top of each Dough Ball;

4.   Score a X on top of each Dough ball with a sharp knife.

It's now time to cook the pretzel buns. You want to place your buns on the pizza stone with a pizza peel. Then cook for approximately 10 to 15 minutes till they are golden and brown. It's also a good ideal in the middle of the cook time to turn the pizza stone 180 degrees to prevent hot spots.

You can also mixes some Parmesan cheese or BBQ rubs in the dough for added flavor to play with your taste buds!

With my Pretzel buns I decided to make burger's with them which was fabulous!!!

Enjoy and Bon Appétit!

Here's another variation of the Dough recipe that I came across that is also pretty good and I thought I would also share it here!

3.  Add Salt and 2 cups flour and mix at low speed with dough hook till the dough ball is form and add more flour till no longer sticky, then increase speed to medium for a couple of minutes;

4.  Remove Dough ball from mixing bowl and wipe the bowl down;

5.  Coat the bowl with Pam or vegetable oil;

6.  Place Dough ball in the bowl and turn the Dough Ball to ensure its lightly covered in oil;

7.  Cover the bowl and let the dough rise for approximately 1 hour till its twice its size;
