I also decided to do some BBQ product testing and reviews on this blog since there's not a lot of reviews out there for BBQ products. Maple Grilled Rainbow Trout
I cook this one on my Kamado Joe but you can cook this on any BBQ!
- 1/2 Cup pure maple syrup
- 1/2 Cup soya sauce
- Raging river (Dizzy Pig Spices)
- Shaking the tree (Dizzy Pig Spices)
- 1 Fresh lemond
- 2 Garlic Clove
- 1 Cowboys Pepper mixe
- 1 Fresh rainbow trout
1. I soaked my trout in 1/2 cup of maple syrup mixed with 1/2 cup soya sauce for 45 minutes!
2. Then I stuffed the trout with a pepper mixes, 1 slice lemon and 2 sliced garlic cloves.
3. I also covered the fish with Dizzy pig Shaking the tree and raging river!
5. I then cook direct at 350 degree F for approximately 10 minutes on each side! I basically cook till meat start to flake or skin comes off easy!

Baked Potatoes on the BBQ
- Fresh good quality potatoes
- Kosher salt
- Canola oil
Directions:
1. Wash all the potatoes very well;
2. Give all the potatoes a light coating of Canola oil;
3. Sprinkle some kosher salt to taste on potatoes;
4. Now take a fork and poke the potatoes with small holes;
5. Pre-heat BBQ to 425 degree F.
6. Place the potatoes on grill and cook 30-45 minutes.
TIP: Cut the cook baked potato in half and put a little butter, sour cream, cheeze, bacon bits, and chopped scallions.
TIP #2: If in a hurry you can pre-cook potatoe 3-5 minutes in microwave oven.

Crunchy Spicy BBQ Chicken Leg Quaters
Ingredients
· 6-8 Chicken leg Quarters
· 2 TBSP Raging River (Dizzy Pig Spices)
· 1 TBSP Jamaican Firewalk (Dizzy Pig Spices)
· 1 TBSP Tsunami Spin (Dizzy Pig Spices)
· 1/2 TBSP Dizzy's Red Eye Express (Dizzy Pig Spices)
· 1/2 Cup flour
· 1/2 Cup corn meal
· 1/4 Cup bread crumbs
· 1/2 cup milk
· 1 Large egg
· 1/4 Cup Franks Redhot Wings Sweet Heat BBQ sauce
· 1 Cup Diana Sauce Gourmet Rib & Chicken sauce
Directions
1. In a bowl blend all the spices;
2. In a plate or large bowl add the spices, flour, corn meal, and bread crumbs and blend very well and this will be your batter;
3. In a separate bowl add the large egg and milk and beat together and this will be your egg wash;
4. Now dip the chicken in the egg wash and ensure it well coated;
5. Now dip the egg wash chicken in the batter;
6. Place the battered chicken in a casserole and cover and refrigerate for 45 minutes for the batter to set.
7. Mean while prep your BBQ to cook indirect at a temp of 275 degree F ;
8. After the 45 minutes place the chicken on the BBQ and cook for thirty minutes then flip the chicken and cook for another 30 minutes;
9. Meanwhile that the wings a cooking for the last 30 minutes mix the Franks Hot Sauce and Diana sauce together;
10. Now cook the chicken for 15 more minutes and baste every 5 minutes.

The BBQ Guru Golf Club 5 in 1 BBQ Tool Review
Here's my review of the BBQ Guru Golf Club 5 in 1 BBQ Tool. I ordered this one back in March looking for a new way to light my Big Green Egg and Kamado Joe. It took two week for my order to arrive which is fair for a parcel coming by regular mail. (picture above was obtained by there website.
So far I find this tool pretty easy to use and versatile. You can use it to steer your hot or cold lump, to lift hot grates, to clean the ashes under the fire box. The Guru Golf Club 5 in 1 tool is designed to be used with a standard propane torch or to be used with a propane tank with special hose attachment. When lighting the charcoal to get maximum effect place the flame and tip under the lump.

I rate this unit 3.5 out of 5 star due to the fact that you can easily light the lump charcoal with a regular torch or electric lighter which is just has fast to light the fire. This tool is handy if you want to light your grill while camping or on the road.

The Adjustable Rig Review
Well three years ago a friend of mine convinced me to order the adjustable rig from the Ceramic Grilling Store. I was a little sceptic at first then I decided to order the adjustable rig for my large Green Egg. It took less then a week for my order to arrive. (picture above obtained from there website)

Large Adjustable Rig:
• The Adjustable Rig sits directly on the fire ring.
• Overall height is 6 inches.
• Four brackets support the crossbars and upper ring.
• The brackets are notched creating Levels at 1.5", 3.0" and 4.5" above the fire ring.
• A front portion of the top ring is cut away and lowered to Level 1.5, improving access to the firebox and inside the Rig.
• Opening between the front brackets is approximately 13-3/16" wide.
• Back support also acts as a stop for grids and such.
• Top and bottom ring diameters are 17.375" OD.
• Big Green Egg® (porcelain or stainless), Kamado Joe (with small hinge gate) or our 18" Stainless large grid sits atop the Rig creating a raised grid set-up.
• Our 16.5" Round or 13"x17" Oval Stainless grids fit inside the Rig.

"Platform: The large Adjustable Rig with Pair of Crossbars is the base platform for your cooks. The Rig sits on the fire ring. Use the Crossbars to set stones, pans, grids and such 1.5", 3.0" and 4.5" above the fire ring. The Rig positions the large 18" stock grid 6" above the fire ring.
Spider: The Large Spider sits down in the fire ring and provides a shelf to wok, sear or blacken closer to the Lump. Use the Spider to hold the 13" Round Ceramic Stone and 13.5" Round Stainless Drip Pan for big two grid cooks on the Rig. Flip the Large Spider up for a shelf above the fire ring. Big Green Egg's small cast iron grid (model #13CI) is recommended for searing on the Spider.
Indirect Piece: Use the 13" Round Ceramic Stone as a heat deflector for indirect set-ups on the Large Spider or Adjustable Rig. The Stone is round like the cooker so it encourages uniform air circulation. We recommend setting the Stone on the Rig whenever possible for easy access to the lump. The 13" Stone matches up with Big Green Egg's platesetter so it's a good fit for baking pizzas on the platesetter, or atop the Adjustable Rig or Rig Extender.
Drip Pan: The 13.5” Stainless Drip Pan is sized to fit inside the fire ring for two grid or low & slow cooks on the Rig. Use it on the Rig for one grid low and slow cooks. Add the 16" Stainless Drip Pan if you plan to do big low and slow cooks. Foil the pan(s) for easy clean up. We recommend using the 13" or 13"x17" Oval Stone under the Stainless Pans.

When I received the adjustable rig I was extremely impress in the quality and craftsmanship that went in the design of the rig. It brings your cooking to the next level on the Big Green Egg and the Kamado Joe.
You can cook indirect and direct with it and you can also use a wok for cooking stir-fry's by installing the spider and placing the wok on top of the spider.
The cooking grill is adjustable with heights of 1.5”, 3.0” or 4.5” (felt line) above the fire ring. (picture bellow obtain from there website)
You have the option between two grid for using inside the Rig: 16.5” Round or 13”x17" Oval Stainless Grids. Both the 16.5" Round and 13”x17” Oval Grids are fabricated with 304 Stainless and have an Electro-polish finish for improved surface performance. (pictures obtained from there website)
This adjustable rig is perfect for cooking ribs, wings, pull pork, etc..... The other big advantage of using the rig is for multi-layer cooking! (pictures obtained from there website)
With the use of the spider and pizza stone it automatically turns your set up for indirect cooking!

I have been using the adjustable rig for pretty much every cook I do in my Big Green Egg and in my Kamado Joe. This accessory is definitely a must have for serious backyard cooking. By getting the adjustable rig combo you get more bang for your buck and its more versatile then just using the plate setter and pizza stone on the BGE or using the heat deflector and pizza stone on the Kamado Joe. I am so impress with this unit that I also purchased the oval rig and wok after owning the round adjustable rig for a few weeks. I definitely rate this unit a 5 star out of 5 hands down!
