Apple pancake casserole on the BBQ



Well today I decided to do some baking on my BBQ. I decided to try my luck at cooking Apple pancake casserole. This one is a little difficult to cook but if you take your time you will achieve good results! A very important with this one that the fire in your BBQ is very well established to be able to maintain a steady 500 degree Fahrenheit for cooking indirect. Well here's the recipe and ingredients needed:

Ingredients:

·            1/2 Cup All-purpose Flour
·            2 TBSP White Sugar
·            1/4 TSP Table Salt
·            2 Large Egg Beaten
·            1 Cup Heavy Cream
·            1/2 TSP Vanilla Extract
·            2 Granny Smith Apples, Peeled, Cored and Sliced
·            1/2 TSP Ground Cinnamon
·            1/4 TSP ground Nutmeg or Ginger
·            1 TBSP Lemon Zest
·            1/4 TSP Kosher Salt
·            4 TBSP Soft Butter
·            2 TBSP Freshly Squeeze Lemon Juice
·            1/2 Cup Brown Sugar

Directions:

1. Pre-heat the Big Green Egg with plate setter with legs down to 500 Degree F. For the Kamado Joe pre-heat with the heat deflector in the top position. Also pre-heat casserole on plate setter or heat deflector.

2. In a bowl combine flour, sugar, table salt, eggs, cream and vanilla. Make sure to mix very well.

3. Place apple slices in a separate bowl and add the cinnamon, nutmeg or ginger, lemon zest, and kosher salt. Toss to combine and keep tossing till the apples are evenly coated!

4. Place butter in hot casserole and wait till butter is melted and now add the apple and sauté them until they are nice and tender. Approximately 8 to 10 minutes!

5. Now add lemon juice and sprinkle the brown sugar on top of the apple.

6. Carefully remove casserole and place a pizza stone on top of plate setter or heat deflector. Now place the casserole on top of pizza stone and add the batter on top of the apples and let it cook for 12 minutes or until batter is set with lid close on the BBQ.


7. When ready remove and let cool for a bit then very carefully invert the casserol in a large platter!

P.S. You can add some icing sugar as a topping!
