For supper today my wife had a craving for a good stir fry. So I decided to make one for her on my Kamado Joe BBQ using the Kettle-K griddle. This stir fry can also be done using a wok but I personally find using the griddle saves time and it's much easier to do. If you own a propane BBQ you can also get a griddle for it from the Little Griddle Innovations company. Well let's get cooking shall we!!
Ingredients:
- 1 yellow pepper chopped (1 cm cubes)
- 1 red pepper chopped (1 cm cubes)
- 1 orange pepper chopped (1 cm cubes)
- 2 clove garlic finely chopped
- 1 red onion sliced and chopped
- fresh sliced mushrooms to taste
- Club house Lagrille vegetable spices to taste (I used 1 TSP)
- Club House roasted garlic & peppers to taste (I used 1 TBSP)
- 1/2 TSP Dizzy Pig Jamaican Fire-walk optional
- black pepper to taste
- 1 pinch kosher salt
- 2 skinless boneless chicken breast cut in cubes
Direction:
1. Pre-heat BBQ and griddle till drops of water sizzles at a rapid rate on griddle.
2. Spray griddle with some Pam or Olive oil and add the chicken, garlic, onions, mushrooms, black pepper and optional Jamaican Fire-walk.
3. Stir constantly till the chicken is halfway cooked.
4. Now that the chicken is halfway cooked you can add the rest of the ingredients and continue to cook till the chicken cubes are fully cook and your vegetables are nice and tender.
Note: You can also add celery and green peppers if you wish!
Tip: Ounce you have reach the desired griddle temp completely close the bottom vent of The Big Green Egg or Kamado Joe and the griddle temp will not creap up on you!
